I am using a strict definition of high-level. What I mean is randomized trials or well-performed meta-analyses (e.g. of randomized trials). I think we have sufficient evidence to state that processed foods are carcinogenic, I agree. There is evidence that is convincing to me, granted based on epidemiological/observational clinical trials. I believe that your spot-on observation pertains especially to colorectal cancer.

In summary, I agree with you that processed foods have sufficient evidence that they should be avoided. Red meat probably increases colorectal cancer (I believe it does) but the evidence is not as high as I would like, so if one consumes it, please consider doing it in moderation (i.e. non-American size portions).
